I'm So Corny

Last night I made corned beef for dinner. I was going to make some rye bread to go with it but got lazy so I had to think of something quick. Hmmmm, what about corn bread? Can you guess what happened next? We ended up having corned beef, cornbread, corn and peas, and carmel popcorn. I'm giggling even as I type this. I'm so weird. For some odd reason I just get a kick out of silly things like this. So, tonight I think we will have pie night. Chicken pot pie for dinner, and pumpkin pie for dessert. Mmmmmmm.

My Mom's Awesome Chicken Pot Pie

1/2 C. finely chopped onion
1/2 C. finely chopped mushrooms
1/4 butter
1/3 C flour
1/2 tsp each of salt, sage, and thyme
1/8 tsp pepper
2 C. chicken broth
3/4 C. milk
2 C. mixed vegetables (frozen or fresh) I like to use corn, peas, carrots, zucchini, chopped frozen green beans, etc.
2 C. cubed, cooked chicken
1/8 C. chopped fresh parsley
2 unbaked pie crusts big enough for a 10 inch pie.

Heat oven to 450. Line 10 inch pie pan with 1 crust. Saute onions and mushrooms in butter till soft ans slightly golden. Stir in four and seasonings. Stir till all the flour is coated in butter (I like to cook and stir a little longer at this stage for added flavor). Gradually pour in stock and milk while stirring continually to prevent lumps. Add the rest of the ingredients and stir till hot and bubbly. Pour into pie shell and top with second crust. Bake till crust is golden and browning around the edges. Let cool for 5-7 minutes before eating. Mmmmmmmmm.

I'm gonna have to try that potpie recipe. Sounds great. I haven't had homemade potpie in years.

it's been a while since i've made chickent potpie. we love homemade potpie around here. i'd make it for dinner tonight, but i used my chicken to make chicken noodle soup last night. mmmmm... but maybe if i did around in the freezer i can find more chicken. :)

Potpie is great. I made my chicken potpie for dh when we were engaged, and he said even if it was the only thing I knew how to cook he would die a happy man. Luckily I know how to cook lots more than that though. We don't actually get potpie very often. Hmmm...

I laughed out loud at the *corn* theme. Those kinds of things hit my funny bone too. I bet the kids thought it was great as well.

Oh I love it-- corn night and pie night. You know what we used to do when the kids were little? We'd have an alphabet meal. For example, P-night: pizza, peaches, and pop. S-night: soup, sandwiches, and salad. I had a notebook with menu ideas for every letter of the alphabet that worked. That was so much fun. Thanks for reminding me.
