It Makes Me Happy


You know that song by Sheryl Crow, If It Makes You Happy, It Can't Be That Bad? Well, I keep singing it to myself this morning as I eat massive amounts of fresh baguette, pesto, and mozzerella cheese. This is why I don't buy pesto. I always plan to make a really yummy pasta for dinner, but it never seems to make it to dinner. *Sigh* I have no self control.

Now, if only I had some tomato I would be in heaven!

Hello!? Where have you been! I was pleading for someone to recommend authentic pesto to me on Facebook! Does this have pinenuts in it, and olive oil? Otherwise, It wouldn't really be Genovese . . .

Yes, it has pinenuts and olive oil in it along with granapadano cheese and pecorino ramano. I bought this at Trader Joes (same place I buy the root veggie chips). Next time you are up here you need to stock up on their wonderful stuff.

It's not fair that we don't have a Trader Joe's here! What makes me happy is when I KNOW I'm going to NOT diet and can eat anything I want. Of course, I'm sicker than a dog by night, but boy it was worth it! (I'm a sad, sick person!)

as for what i can't eat too many of, the list is too long. butter cookies and shortbread probably top the list this time of year. i am just putting off my baking for as long as possible, rather than stuffing my face with spritz and shortbread all month.

sidenote: my favorite thing to do with pesto these days is to layer it on brie with sundried tomatoes and toasted pine nuts. cut the brie in half and put the christmas colored layers in between and on top. bake for about 30 minutes. eat with toasted baguette, on crackers, or just with your fingers!:) it's so decadent and wonderful. and makes a great and easy appetizer if you need to take something to a party (and if you are willing to share.)
